If Casa Juanito had to choose one Andalusian product it would without doubt be Almadraba tuna. “To get it you have to come here, you can’t find it anywhere else. It’s the best product in Andalusia, and I’d even say in the world”.

The restaurant’s chef, Pedro Pérez, has no secrets, no hidden cards tucked away up his sleeve; “that’s for poker players; I share everything I know with any colleague who enters my kitchen, there’s no mystery”.

Andalusia is mirrored in every single dish served in this restaurant through the use of colour. “I like to put a piece of meat on a white plate and decorate it with other things that add a touch of colour”. For Pedro “Spain is the best country to live in, and within Spain, Andalusia”.

Casa Juanito has been serving traditional homemade seafood since 1948. The food is pampered and prepared with great affection, producing all the taste of a job well; the cuisine is based on time honoured recipes, but is always open to new ideas. Pedro believes that everything has not yet been invented in Andalusian cuisine; “there must be things still waiting to be discovered”.
