These two chefs pass on their own experience of life, thethings that stimulate them from one day to the next. Above all they transmit their all-consuming love for their profession. Their greatest satisfaction is for the customer to appreciate and enjoy their dishes and to feel happy with them. “We have a motto: the one who enters as a customer leaves as a friend”.
“To be a chef you only have to have good taste and a lot of motivation”. In this restaurant there is great respect for classical cuisine, although the two chefs are keen to enhance it with modern techniques, “while always maintaining our respect for tradition”. A perfect symbiosis exists between the two, “one is never more imporant than the other”.

For them, there are no secrets in cooking. It’s something open: “the important thing is to share your experiences and your little tricks with your cooking partner, and that way you progress. Then each one adds his own personal touch”.
With regard to Andalusian products, Marcos points to the Raf tomato from Almeria - “it’s sublime” - and, of course, olive oil: “it’s our gold, a product we should wear like a badge wherever we go inthe world. There are better and worse oils, but ours can’t be called into question”. Andalusia is very much present in the menu, almost 70% of which involves regional products. “We don’t need to search outside Andalusia because here inside the region we have our own full, varied, rich larder. Our products, our climate, our hospitality are the key factors we have to promote to open up Andalusia to Spain and to the rest of the world”.
