Pedro Giménez

Pedro Giménez was bitten by the cooking bug in England when he was there studying Marketing, Advertising and Public Relations. He soon dropped out of university to travel the world as a full time chef, stopping off in France, China and Madrid before finally settling for good in his home city of Seville.

Somewhat tired of seeing Seville stereotyped as a place for tapas and pescaíto frito, Giménez battles day to day to change this perception. He describes his cooking as traditional but updated, and uses high quality locally produced ingredients. He attaches particular importance to dressings and presentation.

Despite the high degree of creativity evident in his dishes, he does not consider himself an artist. He prefers to descibe himself as an untiring worker in an ongoing period of apprenticeship. His greatest satisfaction is to see his customers leave satisfied, thinking they have paid a fair price for what they have eaten, and above all to see them return. Restaurant Tribeca (Sevilla).
