The very special place occupied by rice in Andalusia makes it the core ingredient of many of our most typical dishes and an indispensable item in our larders. Rice is a basic part of the Mediterranean Diet, a healthy, nutritive cereal with properties which make it ideal for any kind of diet or special nutritional requirements.

Spain is Europe’s second largest rice producer, producing 0.9 tonnes per year. And if there is one place in Spain that can claim to be the leading rice producer it must be Seville, the capital of Andalusia and a pioneer in the incorporation of integrated production techniques. The rice growing areas given over to integrated production in Andalusia cover 36,000 hectares. They are located mainly in Las Marismas and also to a certain extent in the province of Cadiz, in La Laguna de la Janda.
