Usisa, this fish salting and preservation company is located in Isla Cristina (Huelva). It currently moves approximately 10,000 tonnes of fish, with a turnover of around 23 million euros.
Its leading products are its Andalusia Mackerel Fillets, its Tuna Fillets, its Bullet Tuna Fillets and its Tuna Mojama, all of which bear the “Certified Quality” label. But the company also produces belly tuna, sardines, Boquerones y Sardinillas de la Costa (coastal anchovies and sardines) and cod roe, all preserved in olive or sunflower oil. Each product is marketed in different formats and under different brand names: Usisa, Conservas Tejero and Conservas el Decano.

Usisa products are made with a lot of quality, and that’s why in my recipe I wanted to have a very simple sauce so as not to overpower the taste of the Usisa mackerel but rather to enhance its flavour, and also that of the tuna mojama”.
